I love the flavours
of the Middle East cuisine and this meatball salad delivers a tasty and well-rounded meal, enjoyed hot or
cold you'll love it. Quick and simple meal, for a light lunch and a great meal to bring to work.
INGREDIENTS:
100g grass-fed beef mince
1/4 teaspoon sesame seeds plus some extra to serve
1/4 teaspoon ground cumin
1/4 teaspoon ground coriander
1/4 teaspoon dried chilli flakes (optional)
1/2 tablespoon coconut oil for frying
1 cup fresh green leaves mixed lettuce
1 raw beetroot, grated
1 small carrot, grated
1/2 tablespoon extra virgin olive oil to drizzle
1/4 teaspoon lemon juice
20g pumpkin seeds, toasted (optional)

salt and pepper to season
DIRECTIONS:
Combine the mince meat, sesame seeds, and dried spices in a bowl.

Heat your coconut oil in a fry-pan over medium to high heat and cook the meatballs for 2-3 minutes each side.
For your salad wash and place In a bowl, combine your fresh garden greens, grated raw beetroot and carrot, dress with olive oil and lemon juice, season with salt and pepper and toss well to combine. place on a serving plate, top with the middle eastern meatballs then sprinkle with some extra toasted sesame seeds and pumpkin seeds (optional). Enjoy
NOTES:
- You could also add Tzatziki sauce with this recipe.
